Cauliflower Cheese Mash – Picky Kid Approved
I’m always looking for ways to get my picky son to eat healthy foods – my girls are usually willing to try new things, but my son will take one look at something and immediately say “YUCK”. So, when I find something that works, I stick with it, and lately that hidden ingredient has been CAULIFLOWER!
Tonight, while dinner was cooking, instead of traditional rice or potatoes (we were having honey salmon), I decided to throw together what I called “Cheese Mash”. As I was stirring in the cheese my curious, and picky son, walked into the kitchen to see what I was doing. I told him I’d made a yummy side dish called “Cheese Mash”, and I offered him a taste. Of course, as soon as he looked at it, he turned up his nose, said ewww, no way. Somehow, I’m not quite sure what I said, I convinced him to taste it for me to see if it needed more cheese. One little bite and he was hooked! All 3 of my kids had 2 big helpings, and he was none the wiser that he was eating cauliflower!

- 1 Head of Cauliflower
- ½ Cup of Cashew Milk (almond, soy or regular milk will work too)
- 2 - 3 Cups of Mozzarella Cheese (or the cheese of your choice)
- Pinch of Salt (to taste)
- Garlic Powder to taste (I used approximately 1 tsp)
- Chop up the Cauliflower in small pieces (I use my Tupperware Power Chef, but you can do it by hand or with a food processor). Cook the cauliflower on the stove top with the milk mixed in. Stir until the cauliflower begins to soften so you can mash it - for a smoother consistency you can put it back in the food processor. You can also pre-cook the cauliflower in the microwave to speed up the process. Add in the salt, garlic powder and 2 cups of cheese. Continue to stir. Pour the mixture into an 8x8 pan, sprinkle more cheese on top. Bake at 350 until the cheese is melted.
